Here is my usual Sazerac Recipe. The original cocktail would have been made with Cognac and at some point, rye whiskey was substituted. (I assume it was when the French Creole found it difficult to obtain Cognac and rye whiskey was readily available.) I use both in my version. Sazerac Ingredients: 1 oz Rye Whiskey 1 oz Cognac 3-4 dashes Peychaud's bitters 1 dash Angostura bitters 1/4 oz simple syrup (or sugar cube and water) Absinthe Directions: Put all ingredients, except absinthe, in a mixing glass with ice and stir. Let the cocktail sit while coating the inside of a rocks glass with the Absinthe. Strain the cocktail into the rocks glass. Garnish with a lemon peel.
