Hopefully a question from the community or from anyone who has ever had the joy of turning malted barley on floorings at one of the few distilleries still operating their own floor matings. How much of a challenge and affect can ambient conditions, seasonal changes and I assume temperature can influence the way drying malt is handled? On a total tangent, since we hear more frequent discussions surrounding the installation of under water data centres with the increasing use of AI technology and Quantum computing, do we foresee this affecting whisky production as it has already for housing planning in England, through the calculations of water supplies, usage and shortages? Additionally, would you accept a data centre to be installed in your favourite distillery water source if it could be?
