Had a wonderful time out at Whiskey Acres in DeKalb, IL. I’d heard about them before but the recent interview on the Estate Whiskey designation sealed it for me. Certainly not a distillery with a hobby farm, or a farm that makes things for the local farmers market. Seed to spirit and wonderful quality. The BIB Rye really stood out to me. 75% rye mash bill with some craft distillers can be firey. This was complex, balanced, and smooth.
