Decided to do a palate exercise with rum, because it’s winter in Indiana. Dark, gloomy and currently 22 degrees. A good time to escape to the Caribbean, right? I don’t have a big rum collection but did have 3 bottles from different counties at different proof points. Loved the funky banana and tropical fruit nose on the Smith & Cross, but the Doorly’s was my overall favorite. Molasses, brown sugar, vanilla, oak, nutmeg, clove, cinnamon, and light banana.
