Today we visited the distillery at Vercors in Saint Jean en Royans- France and tried their Sequoia whisky. Very nice discovery, a young distillery with a lot of potential. Their signature is always using whisky matured in cognac casks. The most interesting was their stainless low wine still for low temperature distillation. The second distillation is done in a cognac copper still.
