Instead of a traditional mash tun, Iowa’s Cedar Ridge Distillery runs their mash through a pressurized set of filters (machine seen here). I’d love to hear more about this technology on Behind the Label, @Mark! Master Distiller Murph Quint says their yield of fermentable liquid from the mash has gone up from about 70% to close to 99% since switching two years ago.
