With the ever increasing range and shelf demands of the whisky market, are more and more bottlings coming out with finishes, increasing peat levels and - in some cases - flavourings? Are those unfinished, unpeated Scottish whiskies now overlooked as the next special release, weird cask, artist-painted sherry bomb/peat monster grabs the headlines? (I’ll add, I’m not that broadly familiar with Irish whiskies, and bourbon seems to be more subtle variations on mashbills, age or who’s picking the barrel.)
