Yesterday at Lagg distillery we learnt two new things from our fantastic tour guide Alistair: - Not all Peat is equal, and - All water can be made equal At Lagg they source their peat from an ancient woodland in the north east of the mainland and that means it doesn’t have the iodine and medicinal flavours of costal peat that comes mostly from seaweed and sphagnum moss. And… as suspected, the pure water story we hear at so many distilleries, is a marketing thing… but not for the reason I thought (my theory came from the fact that most distilleries bottle in Glasgow where they lower the avb with Glasgow tap water… which is also true) … for distillation, water needs to be free of sulphur and other minerals that affect the taste of whisky (when added to the mash) and that is why natural filtered water is good… but all water can be treated to come to a desirable standard…
